Method:
- Place lamb in a bowl. Combine oil and lemon juice, oregano, salt and pepper. Toss to coat lamb.
- Pre-heat a wok or frying pan to medium-high heat. Cook lamb for 5-8 minutes, stirring occasionally, until browned and cooked through. Set aside to rest.
- Toss salad mix with cucumber and tomatoes.
- Warm wraps in the microwave for 10-15 seconds or heat briefly in a pan or on a chargrill.
- Spread wraps with Tzatziki, followed by salad mix, cucumber, tomatoes and lamb.
- Wrap and serve.
TIPS:
- Use pre-cut stir-fry lamb
- Use bottled dressing instead of making marinade
- Skip vegetables and use a bagged salad
- Cook everything on the bbq or in one pan = less washing up.
